1 cucumber partially peeled
1 tsp sea salt
1 tsp sugar
1/4 cup raw apple cider vinegar
1 Tbsp white vinegar
water to cover
Directions: Mix all ingredients in a bowl. For best taste chill for at least 30 minutes. Enjoy!
Salmon with Strawberry and Cucumber Salsa
Serves: 4, Prep Time: 15 minutes, Cook Time: 10 minutes
- 4 Salmon Filets
- 2 Tbsp Garlic infused Olive Oil
- 2 Tbsp Lime juice
- ¼ tsp salt
- ½ tsp black pepper
- 1 pint fresh strawberries, diced (2 cups)
- 1 English cucumber, peeled and diced (2 cups)
- 2/3 cups chopped red onion
- 2 Tbsp chopped cilantro
- 2 Tbsp fresh lime juice
- ½ tsp salt
- 1 jalapeno pepper, seeded and minced
Coat salmon with lime juice, salt and pepper. Add 2 Tbsp garlic infused oil in saute pan. Cook salmon for approx. 5 minutes on each side. When fish is done it should flake easily with a fork.
Combine all salsa ingredients in a bowl and toss to combine. Store in an airtight container and chill until ready to use. (Makes approx. 3 cups.)
